  • 1/2 cup sugar
  • 1/2 cup packed dark brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon table salt
  • 2 cups shredded carrots
  • 1 Granny Smith apple, shredded (1 1/2 cups
  • 3/4 cup sweetened shredded coconut
  • 1/2 cup golden raisins
  • 3 eggs
  • 3/4 cup canola oil
  • 2 teaspoons vanilla extract

Preparation

Step 1

Preheat over to 350with rack in bottom third.

Whisk together flour, sugar, brown sugar, cinnamon, baking soda, and salt in a bowl.

Stir in carrots, apple, coconut,and raisins.

Whisk together eggs, oil, and vanilla; add to flour-carrot mixture and stir until just combined. Scoop batter into muffin liners until full.

Bake muffins until a toothpick inserted in centers comes out clean, about 25 minutes. Let muffins cool in pas 5 minutes before turning out.
