  • 12 ounces boneless, skinless chicken breasts cut into chunks
  • 1 10 ounce can diced tomatoes with jalapeno peppers
  • 1/2 tsp. cilantro
  • 1 cup shredded Monterey jack cheese
  • 1 cup shredded cheddar cheese
  • 4 flour tortillas

Step 1

Cook chicken, tomatoes, and cilantro over medium heat until chicken is no longer pink and liquid has evaporated. Set aside.

Blend cheeses. Place tortillas on a flat surface and fill with chicken mixture and cheeses. Fold tortilla over. Coat skillet with cooking spray and brown each tortilla until crisp or cheese is melted. Serve with guacamole, sour cream, and salsa.
