  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil
  • 1/4 cup sour cream
  • 2 tsps vanilla extract
  • 2 large ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 large egg
  • 4 oz soft cream cheese
  • 1/4 cup granulated sugar
  • 3 tbsps all-purpose flour

Preparation

Step 1

The coconut oil adds a slightly sweet taste which is lovely but vegetable oil can be used instead. You can also use Greek yoghurt instead of sour cream if you would prefer.  The sour cream (or yoghurt) keeps the bread soft and fluffy. Make sure the bananas you use are nice and ripe.

Preheat oven to 180C. Grease a loaf pan measuring 9 x 5 inches.

In a big bowl add the egg, brown and granulated sugars, sour cream, coconut oil and vanilla extract. Whisk until all ingredients are combined.

Stir in the mashed bananas.

Add in the flour, baking soda and baking powder and gently stir in until combined. Be careful not to over mix.

Pour 2/3 of the batter into the loaf tin, spreading it smooth across the top. Set aside for later.

In a big bowl add the egg, cream cheese, sugar and flour and whisk to combine.

Pour this mixture, evenly, over the batter you set aside earlier. Smooth it with a spatula making sure it reaches all the sides and corners.

When removed from the oven, allow to cool in the pan for 15 minutes. Then turn out onto a wire rack and leave to cool completely. Cut into slices and serve.
