Ingredients

  • 4 slices chopped center cut bacon
  • 1 c finely chopped onion
  • 2 TB white miso (soybean paste)
  • 4 garlic cloves, minced
  • 1/2 c unsalted chicken stock
  • 1.5 TB maple syrup
  • 1 TB chopped canned chipotle chiles in adobo sauce
  • 1.5 tsp cider vinegar
  • 1/2 tsp smoked paprika
  • 3 (15 oz) cans unsalted navy or great northern beans
  • 1 (8 oz) can unsalted tomato sauce

Preparation

Step 1

Preheat oven to 350

Cook bacon in oven safe skillet over medium heat for 5 minutes or until bacon is crisp. Remove bacon from drippings.

Add onion to drippings and cook 4 minutes, stirring occasionally. Add miso and garlic, cook for 2 minutes, stirring frequently.

Stir in stock and remaining ingredients; bring to a simmer.

Place pan in oven and bake at 350 for 45 minutes or until sauce is thick. Sprinkle with bacon.
