Ingredients
- 3/4 cup (180 mL) cottage cheese
- 1/4 cup (60 mL) canola or mild olive oil
- 2 tbsp (30 mL) honey
- 1 tsp (5 mL) vanilla
- pinch salt
- 1-1/2 cups (375 mL) all-purpose or whole wheat flour, plus extra for rolling
- 2 tsp (10 mL) cinnamon
- 1/2 tsp (2 mL) baking powder

Preparation
Step 1
1. Preheat oven to 350°F.
2. In a medium bowl, stir together the cottage cheese, oil, honey, vanilla and salt. Add the flour, cinnamon and baking powder and stir until the dough comes together.
3. Turn the dough out onto a floured countertop and knead until well blended and smooth. Pinch off walnut-sized pieces of dough, roll them into ropes and shape into a circle, pinching the ends together to seal.
4. Place an inch apart on a baking sheet that has been sprayed with non-stick cooking spray, and bake for 15-20 minutes, until golden. To make them extra firm, turn off the oven and leave them inside to harden and dry as the oven cools.
