Ingredients

  • 4 cups cooked rice (white or brown)
  • 1/2 lb. cooked chicken breast
  • 1/2 lb. cooked prawns (shrimp)
  • 1/2 lb. diced bacon
  • 1 cup frozen peas, corn, and carrots (divide evenly)
  • 1 white onion, chopped
  • 1 tbsp. shallots, chopped into small pieces.
  • 2 cloves, garlic minced
  • 2 eggs
  • 3 tbsp. sesame oil
  • 1/4 cup soy sauce
  • If you like you can also add some water chestnuts, bean shoots, baby corn, snow peas etc.

Preparation

Step 1

Prepare 4 cups of cooked rice according to package directions
Heat sesame oil in a large skillet on medium heat.
Add onion, garlic, peas, corn, shallots, and carrots. Stir fry until tender.
Crack egg into pan and scramble, mixing throughout vegetables.
Add rice, chicken, prawns and bacon to pan. Stir in soy sauce and remove from heat.

Tip: You can also add Thinly sliced beef strips.
