Ingredients
- 2/3 cup vegetable shortening
- 2 cups light brown sugar
- 2 tablespoons hot water
- 2 eggs
- 2 tablespoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped walnuts
- 1 cup (6 ounces) semisweet chocolate chips (see Options)

Preparation
Step 1
Preheat oven to 350 degree. Coat 9x13" baking dish with cooking spray.
Melt shortening in microwave in small microwave-safe bowl (or on stovetop in small saucepan); let cool slightly.
Transfer to large bowl when cool; add light brown sugar, hot water, eggs, and vanilla; blend well. Add flour, baking powder, baking soda, and salt. Beat until thoroughly mixed.
In small bowl, combine nuts and chocolate chips; reserve 1/2 cup of mixture and stir rest into batter, mixing evenly.
Spread batter evenly into prepared baking dish. Sprinkle top with reserved 1/2 cup chocolate chip mixture. Bake 25 to 30 minutes, or until wooden toothpick inserted in center comes out clean.
Options:
Substitute either butterscotch or peanut butter chips for chocolate chips.
