Ingredients

  • 3 oz dark couveture chocolate, chopped
  • scant 1/2 cup milk
  • heaped packed 1cup brown sugar
  • 3/4 stick salted butter, softened
  • 2 large eggs, slightly beaten
  • 2 cups all purpose flour
  • 1 1/2 tblsp unsweetened cocoa powder
  • 1/2 teas baking powder
  • 1/2 teas baking soda

Preparation

Step 1

1. Heat the oven to 325.

2. Line the required baking pan.

3. Place the chocolate, milk, and half of the sugar into a deep saucepan and bring to a boil, while stirring occasionally.

4. Using an electric mixer with a paddle attachment, beat the butter and the remaining sugar until pale and fluffy.

5. Slowly add the eggs.

6. Sift the flour, cocoa powder, baking powder, and baking soda and add to the mixture while mixing at low speed.

7. While the chocoate mix is still hot, using a measuring cup, slowly pour it into the batter while mixing at low speed.

8. Once combined, pour batter from the bowl directly into the lined pan.

9. Bake 15 min for cupcakes, 25 to 45 for large cakes.

10. Once the cake is baked lt rest about 15 miutes. Once cool, remove the cake from the pan. (Best to let large cakes rest over night before iced. Cool dry place).
