Tomato Basil Soup

Ingredients
- 8-10 tomatoes, peeled, cored, and chopped, or 4 cups canned tomatoes, crushed
- 2 cups tomato juice
- 2 cups chicken broth
- 12-14 fresh basil leaves
- 1 cup whipping cream (or half and half)
- 1 stick unsalted butter, softened
- ~ salt to taste
- 1/4 teaspoon cracked black pepper
- ~ basil for garnish

Preparation
Step 1
combine tomatoes, juice, and broth in large saucepan over medium heat. Simmer 30 minutes. In blender or food processor, combine tomato mixture and basil leaves. This well need to be done in small batches. Puree and return mixture to saucepan on low heat. Stir in cream and butter. Season with salt and pepper. Continue stirring over low heat until heated through. Divide soup among 8 bowls
