whisk all ingredients together. let it in fridge for 24 hours. use fancy pockets pita bread. Run water on both sides of pita before putting in frying pan to heat up on both sides.
Remove cardboard tube in centre and cut right down the center using an electric knife. Place 2 halves in a roaster - I have a rack on bottom so it doesn't sit directly in grease. Cook at 350 for 1 hour - remove and shave off cooked meat (keep out and place the rest of the slab of meat
back in the oven to cook for another hour. Repeat shaving procedure until it is all cooked - approx. 2 1/2 hours.
Once you see when you you are shaving off the cooked meat, that it starts looking pink - that's when you know that portion needs more cooking.
