Rhubarb Cobbler
This is delicious!
I used 1/2 of the sugar and 1 T plus 1 tsp of cornstarch for the recipe. It was too much sugar to put on top.

Ingredients
- 2 cups rhubarb
- 3/4 cup sugar
- 3 T butter
- 1/2 cup milk
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup sugar
- 1 T cornstarch
- 1 cup boiling water

Step 1
Cut up rhubarb and place in an 8x8 pan. Cream the 3/4 cup sugar and butter together. Sift together flour, bp and salt.
Add alternately with milk. Pour mixture over rhubarb. Combine remaining sugar and cornstarch and sprinkle over batter. Pour boiling water over this and DO NOT STIR. Bake 1 hour at 375. Other fruits may be used such as cherries apples, peaches, blackberries and raspberries.
Mixed berries are good.
If using frozen fruit add a bit more cornstarch
If doubling you might want to increase baking time a few minutes.
This is good served warm, too with ice cream or plain
