Ingredients
- 5 cups chicken broth
- 3 green onions
- 1/4 cup olive oil
- 1 1/2 cups uncooked rice
- 2 cups corn kernels
- 1/3 cup grated Parmesan cheese

Step 1
In medium saucepan bring chicken to a boil. Reduce heat to low to keep broth barely simmering.
Meanwhile chop green onion.
Heat oil in large saucepan over medium heat until hot. Add onion; cook 3-4 mins or until tender.
Add rice; cook and stir until brown and heated through. Add 1/2 cup hot broth; cook and stir until almost all liquid is absorbed. Continue adding broth 1/2 cup at a time, cooking and stirring for about 30 mins. or until rice is creamy but still firm in the center. Add corn during last 10 mins. of cooking time.
Stir in grated Parmesan cheese.
Garnish with green onion.
