Ingredients
- 1-1/2 lb sliced chuck
- 1 lb musrooms, thickly sliced
- 10 oz dry white wine, or cider
- 1/2 oz dry porcini
- 2 lg onions
- 2 oz butter
- 1 cup sour cream

Step 1
First heat the wine till it is simmering and add the dried mushrooms to seep while prepairing the meat and veg. Slice the chuck, the mushrooms and the onions. Melt the butter in a braising pan and saute the onions till golden. Transfer to the side and brown the meat in batches. Now add the dried mushrooms and wine, and the onions to the same pot and put on a lid. Simmer gently for 1-1/2 hours. Add the sliced mushrooms and continue cooking for 30 minutes. Check for seasoning and add the sour cream, only just heating it through. You may dust with nutmeg and serve.
