SHRIMP****Basque Brochettes (Prosciutto Wrapped Shrimp)

19/02/16 - These were really good and if you're going to do prosciutto-wrapped shrimp, this is the way to go - they're a bit fiddly - getting the shrimp on the skewers and getting them wrapped but they can be broiled, rather than fried and they're easier to pick up and eat too. Only complaint was the side - I served them with my white bean and kale mash and they weren't a good fit together. This would work with polenta, I'm sure, or even a salad of some sort.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 - 2 garlic cloves, thinly sliced
- 1 teaspoon Piment d' Espelette (bet Aleppo or paprika would work too)
- 8 large shrimp, shelled, deveined, rinsed and patted dry, tails removed (about 200 grams)
- Freshly cracked pepper
- 4 regular slices prosciutto 4 regular slices, each cut in half lengthwise to create strips (don't use ends!)
- fresh thyme, to garnish, optional
- lemon wedges, to serve

Soak 8 thick bamboo skewers in warm water. Preheat small oven to broil with rack in the upper position.
In a small saucepan over medium-low heat, add olive oil, garlic and piment d'Espelette. Heat until the garlic sizzles and browns lightly around the edges, about 3 minutes. Remove from heat and set aside.
Place each shrimp on a skewer, lengthwise so the shrimp is straightened out. You need thick skewers to get away with this.
Set a rack over a rimmed baking sheet. One at a time, lay the prosciutto on a flat work surface, short side toward you and roll tightly around shrimp. Repeat with remaining skewers. Set aside until ready to cook, removing from the fridge 1/2 hour before cooking.
Lay the shrimp on the prepared baking rack with at least 1/2 inch space between each one. Brush both sides with the reserved oil.
Roast until shrimp are firm to the touch and lightly browned in places, 8 minutes, turning at halfway point. Serve immediately with a squeeze of lemon.
