Ingredients

  • ◾9 tablespoons Countryside Creamery Unsalted Butter, divided
  • ◾1/2 cup Baker's Corner All Purpose Flour
  • ◾3 cups Friendly Farms Heavy Whipping Cream
  • ◾2 cups Friendly Farms 2% Milk
  • ◾1 tablespoon Stonemill Essentials Italian Seasoning
  • ◾2 tablespoons Baker's Corner Brown Sugar
  • ◾1 teaspoon Stonemill Essentials Iodized Salt
  • ◾1 teaspoon Stonemill Essentials Ground Black Pepper
  • ◾8 ounces Happy Farms Deli Sliced Swiss Cheese, cut into strips
  • ◾8 ounces Happy Farms Deli Sliced Provolone Cheese, cut into strips
  • ◾6 sweet potatoes, peeled and thinly sliced
  • ◾12 Yukon Gold Potatoes, peeled and thinly sliced

Step 1

1.Preheat oven to 400°. Coat an 11" x 13" casserole dish with 1 tablespoon butter.
2.In a saucepan over high heat, melt the remaining ½ cup butter. Stir in the flour and cook for 1 minute.
3.Slowly whisk in the heavy cream and milk. Stir in the Italian seasoning, brown sugar, salt, pepper, Swiss and Provolone cheeses. Cook for 4 minutes until sauce thickens and cheese melts.
4.To assemble: Place a single layer of sweet potatoes at the bottom of the casserole dish. Pour about 1¼ cups sauce on top, spreading the sauce out with a spatula to evenly cover the potatoes. Top with a single layer of Yukon Gold potatoes. Continue layering with sauce and remaining potatoes to fill casserole dish.
5.Bake covered for 30 minutes at 400°. Remove cover, bake at 425° for 25-30 minutes until fork tender. If necessary, cover with foil for the last 10 minutes to prevent overbrowning.
6.Let cool for 15 minutes before serving.
