Ingredients

  • 2 slices white bread, crusts removed and torn in pieces
  • 1/4 c whole milk
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 small red onion, grated or finely diced
  • 1 egg beaten
  • 1/8 t allspice
  • 1/4 t cardamom
  • 1/8 t ginger
  • 1/4 t onion powder
  • 1/4 t garlic powder
  • 1/2 t dried parsley
  • 1/4 t salt
  • 1/4 t pepper
  • 2 T butter
  • Gravy
  • 2 c beef broth
  • 2 T flour
  • 1/4 c cold water
  • 1/4 heavy cream
  • 1/4 t salt
  • 1/4 t pepper

Preparation

Step 1

In a small bowl, soak the bread in milk until very soft.
In a large bowl, combine all the meatball ingredients except the butter then add the soaked bread, and mix together with our hands.
Shape the mixture into golf ball sized balls, you should end up with about 24.
Heat the butter in a large skillet and add the meatballs.
Cook a batch at a time, until very browned on the outside, but cooked through, abut 10 min per batch.
Place the cooked meatballs in the oven to keep warm.
For gravy...
Pour 1 c stock into the hot pan that you used to brown the meatballs, let it simmer for about 5 min while scraping the bottom for all the bits.
Strain that "gravy" into a clean saucepan, then stir in the remaining cup of stock.
In a small bowl, whisk the flour into the cold water until smooth, then whisk into gravy. let this simmer for about 5 min whisking constantly until it thickens, then add salt and pepper.
