  • 1 cup cottage cheese, drained
  • 2/3 cup Quark or sour cream
  • 2 large eggs
  • 1 Tbsp. unsalted butter, melted
  • 3 Tbsp. unbleached all-purpose flour
  • Pinch of salt
  • Vegetable oil for panfrying
  • Boiled Cider Applesauce or other applesauce, warmed

Step 1

Whisk the cottage cheese, Quark, and eggs together in a medium bowl. Add the butter, flour, and salt and stir until well combined.
Warm a griddle or a large heavy skillet over medium heat. Pour a thin film of oil on the griddle. Spoon the batter, 1 generous Tbsp. at a time, onto the hot griddles, where it should sizzle just a bit. If it splatters and pops, the surface is too hot and the cakes will disintegrate. Make as many cakes at a time as you can fit without crowding. Cook the cakes for about 2 minutes, until golden on the bottom and lightly firm. (If a cake begins to pull apart when moved, it hasn’t cooked quite long enough. Give it another 30 seconds and try again.) Turn gently. Cook for 1 to 2 minutes on the second side, until golden.
lay the little cakes side by side on plates, rather than stacked, to keep the surfaces crisp. Serve hot, with applesauce on the side.
