  • 1 or 2 slices soft white or whole wheat bread
  • Unsalted butter, softened
  • Salt and freshly cracked black pepper to taste

Step 1

Cover the egg with about an inch of cold water in a small saucepan. Over medium heat, warm the egg, bringing the water to stage just before a full boil, when bubbles begin to break consistently around the water’s edge. Gently stir the egg a few times while heating, to help the yolk stay centered. Turn off the heat, cover the pan, and let it stand-about 2 to 3 minutes for runny soft-boiled or up to 5 to 8 minutes for firmer white and yolk.
While the egg stands, toast the bread and spread it generously with butter. Tear the toast into large bite-size pieces and arrange the toast in a bowl, bird’s nest style.
Gently peel the egg, then arrange it over the toast with its most attractive side up. Sprinkle with salt and pepper and serve immediately. Adjust the number of eggs and toast for how many people are dining.
