  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup sugar
  • 1/2 cup honey
  • 2 large eggs
  • 1 1/2 cups mashed very ripe bananas (about 3 medium)
  • 1 1/2 cups whole-wheat flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 Tbsp. poppy seeds

Preparation

Step 1

Place an oven rack in the center of the oven and preheat to 350 degrees F. Butter a loaf pan measuring 8”x4”x2 ½”.
In a large bowl, cream the butter with the sugar and honey. Beat in the eggs and bananas. In a small bowl, stir together the flour, salt, baking soda, and poppy seeds and add to the butter mixture. Mix just until all the ingredients are well combined. Pour the batter into the prepared pan and bake for 1 hour, until a toothpick inserted in the center of the loaf tests clean. Allow to cool in the pan for 10 minutes, then carefully turn out ont a rack to cool completely.
