Ingredients

  • 4 pounds ground turkey
  • 3 cups bread crumbs
  • 3 large eggs
  • 1/2 cup skim milk
  • 1 1/2 cups chopped fresh parsley
  • 4 to 6 garlic cloves, finely chopped
  • 1/2 to 1 cup grated Parmesan or Romano cheese
  • Salt and pepper to taste
  • Chopped fresh basil to taste
  • 1 pound fat-free mozzarella cheese, cut into 3/4 inch chunks

Preparation

Step 1

Preheat the oven to 350 degrees F.
Combine all the ingredients (except the mozzarella) in a large bowl and mix well, using clean hands. Divide the mixture in half.
Lightly spray two loaf pans with no-stick cooking spray. Fill each pan halfway with the turkey mixture and pat down firmly. Press one quarter of the mozzarella chunks randomly into the meat in each pan. Top with the remaining meat (press firmly). Top with the remaining mozzarella cheese.
Bake for approximately 1 ½ hours. Remove from the oven and let stand for 5 minutes. Remove from the pans and slice. Serves 8-10 people.
Serve this with pasta and your favorite tomato sauce.
