  • 1 large sweet potato, peeled and cut into 1/2 inch thick batons (a.k.a. French Fries)
  • 1 egg white, beaten until frothy
  • 1 Tbsp. vegetable oil
  • Salt
  • Malt vinegar or Cinnamon sugar, optional

Step 1

Preheat oven to 500F. Coat a small baking pan with cooking spray. Toss the sweet potato sticks with the egg white, dump them into a strainer, and tap off the extra liquid.
Place the potatoes in a coated pan. Give each one some personal space and sprinkle with salt.
Bake the potato sticks for 15 to 17 minutes, turning them at least once during the process. You want the sticks to be golden brown and tender.
Sprinkle with malt vinegar or cinnamon sugar, if you like.
