Ingredients

  • 3 1/2 cups of flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 cup sugar
  • 1 cup pecans (chopped)
  • 4 eggs
  • 1 1/2 cup of canned pumpkin(15oz can)
  • 1 cup salad oil
  • 2/3 cup of water

Preparation

Step 1

Sift dry ingredients into a large bowl. Quickly add all remaining liquid ingredients. Use electric mixer on a medium speed to mix until all ingredients are moistened. Stir in pecans. Pour into 2 large loaf pans that have been coated with Bakers Joy. Bake at 350 degrees for 60-70 minutes. Remove from pans immediately,place on cooling rack, brush tops with melted butter(use a pastry brush) and sprinkle with a cinnamon and sugar mixture. Let loaves stand a while before cutting or they will fall apart.
