Ingredients

  • 1 pound smoked sausage
  • 3 pounds chicken cup up
  • 1 large onion chopped
  • 1 bunch green onions chopped
  • 1 bell pepper chopped
  • 1 pound long-grain rice
  • 1 (28 oz) can tomatoes
  • 6 cloves garlic chopped
  • 6 bay leaves
  • salt and pepper to taste
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 pinch ground allspice and cloves
  • 4 (10 oz) cans chicken broth

Step 1

Slice sausage and brown. Brown chicken in a large Dutch oven or heavy pot suitable for baking until done and set aside to cool to remove from bone. Saute all vegetables and rice in oil from chicken until a rich dark brown color. Add tomatoes and stir until broken up. Add the seasoning. Add enough salt to taste salty because once the rice is fully cooked, it will come out just right. Add 2 cups of broth for every 1 cup of rice. Add the meats and stir. Cover. Bake at 375 F for at least 40-45 minutes or until rice is tender. Warning - Do not stir often because this will break up the rice and it will come out too mushy. It is best to stir halfway through. You can substitute any kind of meats.
