  • 6 pounds ground chuck
  • 3 tablespoons instant onion
  • 2 3/4 tablespoons instant garlic
  • 2 3/4 teaspoons cayenne pepper
  • 3 tablespoons salt
  • 9 tablespoons chili powder
  • 4 cups corn meal
  • 2 cups water
  • 3 tablespoons salt
  • 3 tablespoons oil
  • 2 small cans tomato paste
  • 1 small can tomato sauce
  • 3 quarts water
  • 1 1/2 cups onion chopped
  • 3 1/2 tablespoons chili powder
  • 2 tablespoons salt

Step 1

Mix ground chuck, instant onion and garlic, cayenne pepper, and salt. Fry until half done then add chili powder. Wet corn meal with water, salt, and oil. Then mix gently with ground beef mixture. Wet papers and wrap about a teaspoons in each wrap and stack carefully in a large pot. Weigh the top so they do not float when the sauce is poured.

Sauce: Fry tomato paste and add tomato sauce, water, onion, chili powder, and salt. Bring to a boil and remove from heat.

Pour sauce over stacked tamales and simmer for 4 to 4 1/2 hours.
