  • 1 medium onion finely chopped
  • 1 package pickled meat cut into pieces
  • 2 bag frozen lima beans defrosted
  • 4 teaspoons sugar 2 tsp per lb beans

Step 1

Defrost lima beans by soaking in cold water, rinse, and wash beans. Start by making golden brown roux. Just before roux is finished, use wire whisk to make roux creamy. Add onion and pickled meat to roux and cook until onions are tender. Add beans to roux and stir. Add enough water for gravy and cook for 2 hours. Add 2 teaspoons of sugar for 1 pound of beans.
