Ingredients
- 6 tbsp olive oil
- 2 Ib tomatoes, cut in half and seeded
- 2 cloves garlic, minced
- 2 tbsp finely chopped fresh parsley
- 2 tbsp bread crumbs
- Salt and black pepper, to taste
Preparation
Step 1
Preheat oven to 425 F.
In a frying pan, heat oil. Add tomatoes, cut side down; saute for 5 minutes. Turn over and saute on the other side for another 5 minutes. Remove with a slotted spoon and transfer to an ovenproof pan; reserve sauteing liquid. Combine garlic, parsley, bread crumbs, salt and black pepper; sprinkle over tomatoes. Drizzle reserved sauteing liquid over tomato mixture. Bake for 5 minutes and serve.
