  • 2 cups cooked chicken
  • 2 TBSP butter
  • 1/2 LB mushrooms, sliced
  • 1 green pepper, sliced
  • 1/3 cup pimento
  • 6 TBSP butter
  • 6 TBSP flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 cups chicken broth
  • 1 cup light cream
  • 2 egg yolks, lightly beaten
  • 2 TBSP orange liqueur



Step 1

Heat 2 TBSP butter in fry pan. Add mushrooms and green pepper, cook gently till tender. Stir in pimento. Add chicken. Remove from heat.
Heat 6 TBSP butter in saucepan. Sprinkle in flour, salt & pepper. Cook well. Remove from heat. Add chicken broth and cream all at once. Stir to blend. Return to medium heat and cook, stirring constantly, until thick and smooth. Add about 1/2 of hot mixture to the egg yolks gradually, stirring constantly. Return to saucepan and bring to a boil. Add chicken mixture and orange liqueur and heat well, stirring constantly. This is enough filling for 16 crepes. Repeat the last 8 ingredients to make a sauce to pour over crepes when serving.
