Ingredients

  • For the chicken:
  • 12 ounce boneless, skinless chicken breast, cut into 1-nich cubes (24 cubes) (about 2 large breasts)
  • 1 cup diced fresh pineapple or canned pineapple chunks in juice (24 pieces)
  • 8 6-inch wooden skewers
  • For the sauce:
  • 2 tablespoons ketchup
  • 2 tablespoons light soy sauce
  • 2 tablespoons honey
  • 2 teaspoons orange juice

Step 1

Preheat a broiler or a grill on medium-high heat.

Thread three chicken cubes and three pineapple chunks alternately on each skewer.

Combine ingredients for sauce and mix well. Divide into two bowls. Set one aside for later.

Grill skewers for 3 to 5 minutes on each side. Brush or spoon sauce from one bowl onto chicken and pineapple about every other minute. Pour out the sauce when done with this step.

Immediately after grilling, place skewers in an oven at 350. Cook so that internal temperature of chicken is at least 165. Using a clean brush or spoon, coat with the other bowl of sauce before serving.
