Ingredients

  • 1 T corn oil
  • 1 onion, chopped
  • 1 (15 oz) can garbonzo beans
  • 2 cups canned white beans
  • 1 clove garlic, minced
  • 1 (12 oz) can white corn or hominy
  • 1 t cumin
  • 2 (4 oz) cans chopped green chiles
  • 4 cups cooked diced chicken or turkey
  • 2 cups chicken broth
  • Shredded monterey jack cheese with peppers

Preparation

Step 1

In a small saucepan, cook the onion, garlic and cumin in oil until translucent.
Put into a slow cooker then add the chicken, beans, corn, and chiles.
Stir in broth with a wooden spoon.
Cook on high for 1 hour.
Sprinkle servings with cheese.
