Ingredients

  • 1 1/2 lbs ground beef
  • 3 ounces sharp cheddar cheese (cut into 1/2 inch cubes)
  • 1/2 cup finely chopped onion
  • 2 garlic cloves (minced)
  • 1 jalapeno pepper (seeded and minced)
  • 1 tablespoon chopped fresh parsley
  • 1 cup panko breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Preparation

Step 1

Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil. Spray the baking sheet with non-stick cooking spray.

To make the sauce- In a medium saucepan combine ketchup, brown sugar, cider vinegar, Worcestershire sauce, mustard powder, chili powder and ½ teaspoon of ground black pepper. Bring to a boil while whisking. Reduce heat and simmer for 5-10 minutes while stirring occasionally. Keep the sauce warm while the meatballs cook.

In a large bowl combine breadcrumbs, milk and egg. Mix together and let the breadcrumbs absorb the liquid. Add in the onion, jalapeno and garlic. Add salt and pepper. Add the ground beef and work it together with your hands until mixed well.

Roll up meatballs that are about the size of golf balls. Push a piece of the cheddar cheese into the center of each meatball and work a layer of meat over the cheese so that it is fully enclosed. Place onto the greased baking sheet. Repeat until all of the meatballs are prepared.

Place into the oven and bake at 350 degrees F. for 30-40 minutes or until fully cooked (the internal temperature has reached 160 degrees F).

Add the meatballs to the BBQ sauce on the stove and mix gently until coated.
