and indeed – that’s where you’ll find my very own meringue recipes. But to be totally honest, I only put them there because I thought that’s where most people would look when they were searching for meringue recipes.
. They’re not very similar, are they? In fact, the only things they have in common are sugar. And just because a recipe has sugar in doesn’t make it a cookie. Check the list of ingredients on your favourite bottled salad dressing and you’ll agree with me!
But I don’t think that meringues are varied enough to have their own dessert category. Although, these fresh strawberry meringue cookies are good enough to make me reconsider that statement.
how to make the perfect meringue
Yield:
Preheat the oven to 220F/105C and line a baking tray with parchment paper or a non-stick mat.
Place the egg whites into a bowl and use an electric mixer to beat the egg whites at medium speed for 2 minutes, until frothy.
Squirt in the lemon juice and beat for around three minutes, until soft peaks form.
Evenly sprinkle 1 tablespoon of white sugar over the beaten egg whites and beat at medium speed for one more minute. Repeat this step until you've used up all the sugar.
When you've added all the sugar, beat the egg whites at a high speed until stuff peaks form and you can easily turn the bowl upside down without any of the mixture moving.
Chop the strawberries up into tiny pieces and carefully fold into the meringue, being careful not to deflate the mixture.
Scoop the meringue into a piping bag and pipe onto the lined tray. Alternatively, use a spoon to spread the meringue out into the shapes you want.
Bake in the pre-heated oven for around 90 minutes, or until the bottom of the meringue sounds hollow when tapped.
