Ingredients
- 1 dark chocolate cake mix
- 2 pounds ricotta cheese
- 3/4 cup sugar
- 4 eggs
- 1 teaspoon vanilla
- 1 package instant chocolate pudding mix
- 1 8 ounce cool whip
- 1 cup milk
- mini chocolate chips

Preparation
Step 1
1. Grease and flour bottom of 9x13 cake pan. Prepare cake mix as directed on box and pour into cake pan. Set aside. With mixer on medium speed, mix ricotta, sugar, eggs and vanilla till fluffy. Gently spoon cheese mixture on top of cake batter, careful not to mix the two. Bake at 350 degrees for 1 hour. When baked, cheese mixture will be on the bottom and cake on the top. Cool completely.
In large bowl, combine pudding mix, cool whip and milk. Beat on high speed until almost a mousse consistency. Spread on cooled cake and top with mini chocolate chips. Refrigerate until served. Should be made a day or two ahead.
