  • 1 env. unflavored gelatin
  • 1 cup sugar, divided
  • l 1/4 tbsp. cornstarch
  • 4 eggs, separated
  • 2 cups scalded milk
  • 2 squares unsweetened chocolate, melted
  • 1 tsp. vanilla
  • 1-9 " baked pie shell
  • 1/3 cup Tia Maria
  • 1/4 tsp. cream of tartar
  • Grated semisweet chocolate

Step 1

Mix gelatine, 1/2 cup of the sugar, and cornstarch in the top of a double boiler. Beat egg yolks and milk; add to gelatine mixture and cook over boiling water, stirring constantly until mixture coats spoon. Divide custard in half. To one part add melted chocolate and vanilla; mix well and turn into pie shell. Chill until firm. To second part add Tia Maria and chill until it starts to thicken. Beat egg whites with cream of tartar until frothy. Gradually add remaining sugar and continue beating until egg whites hold their shape. Fold in chilled custard and turn onto chocolate layer. Top with grated chocolate, chill.
