Ingredients

  • 1 can corn with juice
  • 1 can cream corn
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 small box jiffy corn muffin mix
  • 1-2 Tbsp butter
  • 1 small container sour cream
  • 2 eggs
  • shredded cheese

Preparation

Step 1

Preheat oven 350.

Simmer onion and peppers in butter. Remove from heat and allow to cool for about 5 minutes.

In a mixing bowl, add both cans of corn, jiffy and eggs. Mix well with mixer.
Add onion and pepper mixture, stir well.
Pour into a sprayed 9x13 baking dish.
Dallop sour cream all over the top.
Bake for 1 hour and 15-20 minutes, do not over bake.
Sprinkle top with shredded cheese as desired.
Bake until cheese is melted.
