Ingredients

  • 1 cup diced yellow onion
  • 1/2 lb mushrooms, diced
  • 3 oz bacon, finely diced
  • 1 Tbsp butter
  • 2 lb spinach, thoroughly washed and chopped
  • 1 can cream mushroom soup, undiluted
  • 1/2 lb swiss cheese, diced
  • juice of 1 lemon
  • 1/2 cup crackers, crumbled

Preparation

Step 1

Preheat oven 350.

In large pot, saute onion and mushrooms with bacon and butter, about 2 minutes.
Add spinach a little at a time; cook over medium heat several minutes until spinach is wilted.
Mix with remaining ingredients except crackers. Pour into a greased casserole dish.
Sprinkle with crackers.
Cover and bake 1 hour.
