Preheat oven to 425°. Spray popover pan with cooking spray and preheat with oven. (Pan should be smoking hot when popovers are added.) Place all ingredients in blender. Blend on slow until ingredients are all mixed. Scrape down sides of blender and blend once more. Pour ingredients into hot popover pan. Bake at 425° for 20 minutes. Reduce oven temperature to 325° and continue to bake for 15-20 minutes more.
