Ingredients
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 cups grated zucchini (1 zucchini makes 2 cups)
- 1 Tbs. vanilla
- 3 cups flour
- 1 tsp salt
- 1/4 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp. allspice
- 2 cups coarsely chopped nuts (optional)

Preparation
Step 1
Beat eggs until light and fluffy. Add sugar, oil, zucchini and vanilla. Mix dry ingredients, add to mixture. Stir until will blended. Add nuts. Pour into 2 greased 9x5x3 inch pans. Bake at 350 degrees for 1 hour or until done. Remove from pans to cool. Can be made ahead and frozen.
