Ingredients

  • 2

    cups cooked rice

  • 1

    pound ground chuck

  • ½

    cup chopped onion

  • ¼

    cup chopped green and red pepper

  • 0

    ne 16 oz can black beans

  • 1

    cup whole kernel corn

  • 1

    tsp salt

  • ½

    tsp pepper

  • tsp chili powder

  • 1

    pkg taco mix

  • ½

    tsp garlic powder

  • ½

    tsp cumin

  • 2

    TBS chopped cilantro

  • 8

    oz tomato sauce

  • 1

    cup shredded cheddar cheese

Directions

-Cook hamburger and drain -Mix with taco mix and water -Add cumin, chili powder, salt and pepper -Saute peppers and onion in butter until soft -Mix meat mixture and vegetables. Add tomato sauce, black beans, corn and cooked rice. Mix well and add cilantro and cheddar cheese. -Bake at 350 for 30 minutes. Add cheese on top for last five minutes
