Creamy Irish Potato Soup

This rich and creamy potato soup is subtly flavored with celery and green onions. It's the kind of soup you'll want to savor slowly...even though it's ready in just 35 minutes.

Ingredients
- 2 tablespoons butter
- 4 medium green onion, sliced (about 1/2 cup)
- 1 stalk celery, sliced (about 1/2 cup)
- 1 3/4 cups Swanson Chicken Broth
- 1/8 teaspoon ground black pepper
- 3 medium potato, sliced 1/4-inch thick (about 3 cups)
- 1 1/2 cups milk

Preparation
Step 1
Heat the butter in a 3-quart saucepan over medium heat. Add the onions and celery and cook until they're tender.
Stir the broth, black pepper and potatoes in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the potatoes are tender.
Place half of the broth mixture and half of the milk in a blender or food processor. Cover and blend until smooth. Repeat with the remaining broth mixture and remaining milk. Return to the saucepan and heat through.

I've made this recipe before, and it was fantastic. My mother in law made a variation of this same recipe. It was DELICIOUS! She added bacon (because my husband insists on meat at every meal), and it was a great touch. She also added sour cream, about a small container's worth.Excellent recipe. Thank you.
A nice quick and easy soup to make. I only blend half of soup to retain some texture.

I've made this several times both at home and at both my mother's and grandmother's houses. Gram hated it, Mom said it was ok but needed more potatoes (both very picky eaters). My children beg for more and want it all the time. Hubby and myself can't get enough, the kids eat it all before we get a second bowl. Definitely a keeper.
My family of eight loves this tasty and economical soup, and we make it regularly. We sometimes add bacon bits to our individual bowls for extra flavor. (Note-- It's nearly impossible to make something that everyone in this family loves.) Thanks for the recipe!
This soup is so easy to make and it's delicious! I made it for our "Cultural Diversity" potluck at work and this was the only dish that didn't have to be packed up for leftovers.
I love this soup. I make it all the time. I have used ham from the holidays instead of bacon and it tuned out quite lovely. I also like to add carrots and leeks if I happen to plan ahead. I too blend only half of this soup, and I like to add just a dollop of sour cream when I'm blending.
This was a good soup, but I changed the recipe. I did'nt have green onions so I used half of a large yellow onion, then I didn't fry the onions in the pan with butter, I just cooked them in with the potatoes. I cut back on the milk and left a small portion of just barely mashed potatoes, instead of blending them all, to make the soup have more texture. It was definitely watery, not as thick as I would like it though but it would make an awesome base for different homemade soups! :) Also goes good with finger sandwiches!
I agree with the poster who said only blend half. Works better when you have chunks of potato in the soup.
Made for my family and they all loved it. Very simple to make and quite tasty, would highly recommend.
Wow - this was even better than I expected, although I did double the potatoes called for, to make sure it was thick enough for my liking. I added more pepper too, but left everything else the same and LOVED IT. Making more again (one week later) right now. Suggest leaving some of the green parts of scallions aside to add at the very end.

This is a good simple soup. As suggested I served some bacon bits on the side and it was all a hit.
