Creamy Fruit Dressing

Ingredients

• 2 eggs
• 1/3 c. sugar
• 3 Tbsp. flour
• 1 tsp. grated orange rind
• 1 tsp. grated lemon rind
• 3/4 c. pineapple juice
• 1/2 c. orange juice
• 2 Tbsp. lemon juice
• 1/2 c. mayonnaise
• 1/2 c. heavy cream, whipped
• Salt, to taste

Preparation

Step 1

Beat the eggs in the top of a double broiler. Mix the sugar and flour; stir into the eggs. Add orange and lemon rind, pineapple juice, orange juice and lemon juice.

Cook over hot water (double-broiler) stirring constantly until mixture theckens. Cool. Add mayonnaise and fold in whipped cream. Add salt. Just before serving add a grating of fresh lemon peel.
