Lime Refrigerator Cake

• 50 vanilla wafers
• 1 c fresh lime juice
• 1 can sweetened condensed milk
• 1 can evaporated milk (12oz)

Preparation

Step 1

Combine the two milks, and lime juice in a mixing bowl and blend well.

Place a layer of cookies in the bottom of a 9 in round pan. Make sure the bottom is covered. Break up some cookies to fill in any gaps.

Spread about 1/5 of the mixture over the cookies.

Repeat the process until the ingredients run out. Its best if the top layer is the milk mixture.

Cover and refrigerate overnight.

This cake is great served with fresh fruit on top.
