Ingredients
- 1 sliced onion
- 1 diced red bell pepper
- 1 diced green bell pepper
- 2 Tbsp oil
- 5/8 tsp salt, divided
- 1 (8 oz) round of Brie
- 5 cups cubed sourdough bread
- 8 eggs
- 3 cups milk
- 1 1/2 tbsp Dijon mustard
- 1 tsp Italian seasoning
- 1/2 tsp black pepper

Step 1
Sauté onion, red bell pepper, and green bell pepper in oil until soft. Add 1/8 tsp salt.
Remove rind from Brie; cut into small cubes.
In a greased 9-by-13-inch baking pan, layer sourdough bread, vegetable mixture, and Brie.
In a large bowl, whisk eggs, milk, Dijon mustard, Italian seasoning, 1/2 tsp salt, and black pepper. Pour over bread mixture. Chill overnight.
Bake at 350 F for 45 to 50 minutes.
