Ingredients

  • Pudding:
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1 Tablespoon Smooth Apricot Jam
  • 3/4 cup- 1 cup cake flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon salt
  • 2 Tablespoons butter
  • 1/2 cup buttermilk
  • Sauce:
  • 1 cup cream
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup water

Preparation

Step 1

1. Beat together the sugar and eggs until light and fluffy.
2. Add the apricot jam and beat well.
3. Sift together flour, baking soda and salt.
4. In a saucepan, melt the butter and add the buttermilk.
5. Fold the flour and milk mixtures in alternatively into the egg mixture and pour into a greased baking tray.
6. Bake at 350 degrees for 45 minutes or until a knife inserted into the center comes out clean.
7. Place all ingredients for sauce into a saucepan and stir over moderate heat untilthe butter has melted and the sugar dissolved.
8. Poke holes in the cake with the end of a wooden spoon, and pour sauce over the hot cake to make a pudding.
9. Serve hot or cold with cream or custard.
