Stuffed Peppers

Can be stuffed three ways:
with corn
with rice
with bread
Also can be made with vege crumbles for the non meat eaters.

Ingredients
- Stuffing options:
- 1 lb of ground beef or 2 packages of vege crumbles
- 2 8-oz cans of tomato sauce
- 4 green peppers
- 1 cup of frozen corn or
- 1 cup of cooked rice or
- 1 cup of stale bread crumbs (soak in water so bread does not absorb all the liquid.
- salt and pepper to taste
- 4 slices of cheese

Preparation
Step 1
Pre-heat the oven to 350°F.
Brown the ground beef
or heat the vege crumbles.
After browning the beef add one can of tomato sauce to the beef (or crumbles), the stuffing you choose and salt and pepper to taste.
Prepare the peppers by cutting the tops off and removing the ribs, seeds and center of each pepper.
Fill each pepper with the stuffing mix, put in a 2 inch high deep pan.
Pour about 3/4 of the second can of tomato sauce over the peppers, put a slice of cheese on top and then finish off the rest of the tomato sauce on the top of the cheese.
Put in oven for 60 minutes.
Serve with a salad and bread.
