Ingredients

  • 10 medium cucumbers
  • 5 tsp. salt
  • 8 c. sugar
  • 2 Tbsp. mixed pickling spices
  • 4 c. cider vinegar

Preparation

Step 1

Cover whole cucumbers with boiling water. Allow to stand till next morning; drain. Repeat this procedure on next three mornings. On fifth day, drain and slice in 1/2" thick pieces.

Combine sugar, spices, salt and vengar. Bring to boiling and pour over cucumbers. Let stand two days. On third day, bring to boiling and seal in hot, sterilized jars. Makes about 4 pints.

This sounds complicated, but it really isn't bad at all. Just takes a little time but they are worth it.
