Ingredients

  • 1 c. coarsely grated carrots
  • 2 1/2 c. cooked brown rice
  • 1/3 c. whole-wheat flour
  • 1/2 c. cottage cheese
  • 2 Tbsp. minced onions
  • 1 tsp. basil, in two parts
  • 1/2-3/4 c. tomato sauce
  • 1 1/2 c. shredded mozzarella

Step 1

To make crust:
Place carrots in a strainer and cover with a weighted plate. Let drain for 20 mins. Pat dry. Combine carrots with rice, flour, cottage cheese, onions and 1/2 tsp. of basil.

Coat a 9 x 13" pan with non-stick spray. Spread the crust mixture across the bottom of the pan and 1/4 inch up the sides. (For round pizzas, place on a cookie sheet and shpe the dough into two circles. Pinch up the edges to form a low rim around each). Bake on the middle oven rack at 350 for 25 mins. Then brown the crust under the broiler for a few mins., removing crust before carrots start to burn.

Remove cooked crust and spread tomato sauce over crust and top with cheese. Sprinkle basil over cheese and bake and 350 for 20-25 mins or until cheese is brown and bubbly.
