- 6 zucchinis,
- 1 onion,
- 1 clove garlic,
- 3 tablespoons shallot,
- 1 tablespoon pine nuts,
- 3 tablespoons parsley,
- 3 tablespoons white wine vinegar,
- 3 tablespoons sugar,
- 1 spoon extra virgin olive oil,
- Fine sea salt

Preparation
Step 1
Cut the zucchini into cubes. Peel the onion and cut into cubes.
Pour a spoon of oil into the ActiFry and heat for 1 minute. Add the zucchinis and cook for 2 minutes, then add the garlic, followed by the onion and cook for 7 minutes. Add pine nuts.
Add the white wine vinegar and the sugar. Cook for about 5 minutes. Salt to taste and garnish with the finely chopped parsley. Serve warm.
