Cheesy Hash Brown Casserole

Ingredients
- peppers - Seeded:
- 3 slices bacon fried crisp (for topping)
- 2 T. butter
- 1 Large onion
- Jalapeno
- Pablano
- Anaheim
- frozen hash brown potatoes (use the cubed potatoes)

Preparation
Step 1
Preheat oven to 375*
Remove bacon and set aside.
Drain most of the grease for bacon and add the butter to the skillet.
Fry onion until they have a little color. Add the peppers and continue frying until the peppers also have some color and onions are golden brown.
Add the potatoes and just mix until combined and potatoes have just a little color.
Add everything to a buttered casserole dish and top with a mix of Jack and Cheddar, or your favorite cheese.
Top with Crumbled bacon
Bake at 375* for 30 minutes
