Ingredients

  • 1 pkg. refrigerated pie crusts
  • 2 medium plum tomatoes
  • 1 1/2 tea. olive oil, or more if needed
  • 1/2 lb. ground beef
  • 3 slices bacon, cut into 1/2" pieces
  • 2 Tbsp. minced onion
  • 1 Tbsp. sherry
  • 1/4 tea. salt
  • 1/2 tea. pepper
  • 1/4 cup grated Swiss cheese

Preparation

Step 1

With a sharp knife, remove the top portion of each tomato and squeeze out seeds and juice. Coarsely chop tomatoes and drain any excess juice; set aside.

IN a skillet over medium heat, saute hamburger, bacon and onion until hamburger is no longer pink and onion is soft, about 5-8 minutes. Use a small amount of olive oil if desired. Add diced tomatoes, sherry, salt and pepper and saute for 1-2 minutes. Remove from heat, drain well and cool slightly. Add cheese and mix until well blended.
