Ingredients
- 1 medium onion, sliced thin
- 6 garlic cloves, sliced thin
- 1/4 cup unsalted butter
- 2 cups beef broth
- 1 cup dark corn syrup
- 1 cup red wine
- 3/4 red wine vinegar
- 1/4 cup molasses
- 2 cups tomato paste
- 1 tablespoon kosher salt
- 1 teaspoon dry mustard
- 1 teaspoon smoked paprika
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cloves

Preparation
Step 1
Cook the onion and garlic in the butter in a saucepan over moderately low heat until softened, about 10 minutes. Whisk together remaining ingredients and add to onion mixture. Cook over low heat until the sauce has a ketchup-like consistency, stirring often to prevent burning. Allow to cool.
Puree in a blender and pass through a fine strainer.
